Daria’s Red Lentil and Sweet Potato Stew

Ingredients

2 Tbsp coconut or extra-virgin olive oil
1 tsp ground cumin
1 tsp ground turmeric
1 Tbsp curry powder
1 diced large onion
Coarse salt and freshly ground black pepper
4 minced cloves garlic
2 Tbsp minced fresh ginger
2 peeled and diced sweet potatoes
1 diced (stemmed, seeded) red bell pepper
1 1/2 cups rinsed red lentils
6 cups Cleansing Broth
Chopped fresh cilantro

 

Directions

  1. Heat oil in a large pot over medium heat. Cook cumin, turmeric and curry powder until fragrant, about 1 to 2 minutes.
  2. Add onion with a few pinches salt, and cook, stirring, until tender, about 6 minutes.
  3. Add garlic and ginger and cook, stirring, until tender, about 2 minutes.
  4. Add sweet potatoes and bell pepper and cook 1 minute.
  5. Add lentils and Cleansing Broth. Bring to a boil, then reduce heat and simmer until lentils are tender, 20 to 25 minutes.
  6. Season with salt and pepper. Top with cilantro before serving.

Easter Bake Sale 2012

Pysanky CookiesTomorrow is Palm Sunday and we’re having a fundraising bake sale with delicious Pascha foods. People who attended the Shevchenko celebration last week got a sneak peek.

There will be plenty available. Cookies, breads, sausages, Paska, beets, and pierogies are among the foods we’ll have.

Visitors and guests are invited and welcome! Come for Liturgy (with the blessing of the palms and pussy willows) at 10AM or come after Liturgy, about 11:30ish.

Jewelry, Easter basket rushnyky covers, and other seasonal goods will also be available in limited supply. We’ll see you there!

Pysanky and Pierogies

ChrystyaSaturday was a very busy day at St. Sophia parish! Pierogie pinchers showed up first thing in the morning, by mid-day pysanky writers joined them in the parish hall, and by the afternoon the preparations for the Shevchenko celebration were underway! It was wonderful to see so many people together!

Here are just a few pictures from the activities. There’s another Pysanky workshop next Saturday on March 31 from 1-5 for any interested. We had a good number of visitors from all over the Metroplex, which was fabulous! (To the woman who asked what she needs to know before coming back to visit for Liturgy: Byzantine 101What do I need to know?What should I expect? We hope to see you again soon!)

Beginner lessons are offered for children over 10 years old.  Younger students will require parental supervision. You don’t need to have prior experience to come. A donation of $5.00 per person will be accepted to offset costs for the snacks and supplies. If you would like to continue to create your eggs at home, a couple kits are still available for purchase with kitska, instructions and dye for $25 a piece.

Christmas Pierogies

A few pictures and a short video from pierogie making today. Christmas orders are pouring in! Father Pavlo, Pani Luba, Janet, Rich, John, Daria, Chris, Maggie, Raia, Roddy, Marie-Diane, Carol, Brian, and Dorothy were among those pinching and rolling. Many thanks to them all!

Pierogies on 10/22/11

We made nearly 1500 pirogies yesterday! Potato and sauerkraut, potato and onion, potato and jalapeño, potato with cheddar cheese, potato with farmer’s cheese, and sauerkraut were all made and are available for order. You can call the parish office any time, stop by the coffee hour after Sunday Liturgy, or come to our picnic on Nov 12th where we’ll have pirogies, halupki, and much more available!
